it's nearly Monday morning and the beginning of a new week. this weekend has been wonderful in the aspect of being privileged to 2 days of thunder and lightening storms and rain. i don't remember thunder lasting this long since many years ago when i was younger. i absolutely loved it! i even layed in bed today for a nap as it lulled me to sleep. every now and then the thunder would awake me, I'd smile, smoosh into my pillow, stretch and go back to sleep. i find that so comforting.

earlier today, i made a soup that has no name yet as i invented it as i went. the recipe will follow at the end if anyone cares to try it. it's very light, tasty and healthy... with a hint of Indian cuisine flavors. i had another bowl when i woke up from my nap, for dinner. we watched some TV tonight as the storm continued outside. it is still thundering & lightening now as i write.

i watched a special after everyone went to bed, called "DAD'S FOR MY DAUGHTERS" hosted by Dr. Sanjay Gupta... if you care to see it, click hErE. it was so touching, and endearing. i am thankful i was able to see it. if only every parent could love their children that much..

on Tuesday i go see my ortho doc and discuss the results of my nerve conduction test. hopefully he will decide whether or not to do surgery to repair my ulna nerve. it's not that i want another surgery, i dread it, but i need the full use of my left arm if i am ever to work again.

is anyone else sick of hearing about Joran Van Der Sloot? he supposedly killed Natalie Holloway 5 years ago and now another woman. the media is all caught up in what his jail cell looks like, in my opinion more so than the crimes he has committed. he is gloating in the attention he is getting right now and i find that disgusting.

but that's just moi.

RECIPE

for Christine's light-tasty-with-a-hint-of-Indian-flavor soup that's so easy to make.

15 cups of water in large pot

3 carrots diced

1 medium onion diced

3 Roma tomatoes diced with pulp

2 limes- juice in small bowl & set aside.

2 cups peas

i slightly over filled tablespoon Garam Masala [can be found in Indian spice isle]

black pepper to taste

1/2 teaspoon poultry seasoning

1 teaspoon onion powder

1/3 cup either chicken or vegetable bouillon in powdered form

1 cup packed chopped cilantro- measure once chopped

1/2 stick butter

 

METHOD

slightly sauté all veggies in butter. add water, spices, lime juice, bouillon, and bring to a boil. simmer for an hour. add cilantro in final 30 minutes.

VARIATIONS

you can boil chicken breasts and remove to cut up meat when done. still add all of the ingredients mentioned along with chicken and still simmer 1 hour.

you can also add 1 cup uncooked rice or macaroni in last 30 minutes if you like that in your soup. enjoy!

we got some really good thunderstorms last night...unfortunately....when they come, though i love them so much....i get a migraine each time a storm comes through. but i love a good storm...i just have to enjoy it from my bed...medicated...in a delirium or stupor from my medication....but it soothes me as i slumber. lol and the puppies on your fathers day post are the cutest! i want them! ok....off to medicate myself....i believe another storm is coming....my barometric (head) gauge tells me so!

Your soup sounds great...but I would have to omit the peas. Never ever could I eat a pea. :)
We are having our daily thunderstorms now, this happens all summer in Florida. (the sunshine state??) they come in around 3-5 pm and last for a few hours, you can actually watch them come from the everglades. Pretty powerful, I like them, but you know who does not? My sissy dogs.

I hope you get the news you want from the Ortho this week. I can't wait until you are back to your old silly working self.

That's one thing we don't get very many of here in So Cal...thunder storms. Which is a good thing because normally they turn into fire storms.

Your soup sounds delicious. Though I'm not familiar with Garam Masala, I'll have to give it a try!

that soup sounds yummy! I'll have to try it when our weather cools down some. glad the storm was soothing and comforting and made you feel restful so you could sleep! Yes, I'm tired of the VanDerSloot media coverage and I heard this morning he is now professing that he was tricked to confess about his latest victim's murder. Makes me sick he won't acknowledge guilt :(
